The Little Bakery of Happiness is a small [but perfectly formed] specialist gluten-free craft bakery. We produce handmade sweet and savoury treats from our bakery at Nene Court in Wellingborough, Northamptonshire.

Everything we bake is gluten-free and we do offer some dairy-free and vegan goodies, but please note that while our bakery is a controlled gluten-free environment and we do have strict cross-contamination controls in place when baking food that is dairy free and/or vegan, we do use milk, eggs and meat products on a daily basis.

TOP TIPS FOR TIP TO GLUTEN-FREE YORKSHIRE PUDDINGS

Baking gluten-free Yorkshire puddings strikes fear into some but it really doesn’t need to! With the right mix and a few simple steps, you will be baking yourself to Yorkshire pudding happiness in no time!

  • Your oil needs to be *really* hot. We put the pan in the oven when we turn it on, set the heat to max temperature (230c fan) and only once the oven has reached temperature do we consider baking the puds.
  • Work quickly!  You need to be careful when working with very hot oil but it is important to have the tin out of the oven for the shortest time possible when you’re making your puds – have everything ready right next to where you will put the tin when it comes out of the oven.
  • Having your Yorkshire pudding batter in a jug will help you when it comes to pouring it into the tin.
  • Focus on pouring the batter into the centre of the holes if you’re baking individual Yorkies in a cupcake tin – this will help you get puds with hollow centres (perfect for pouring oodles of gravy).
