GLUTEN-FREE COOKIE DOUGH SPRINKLES BALLS

A ridiculously easy no-bake recipe for vanilla cookie dough balls with double the sprinkles – both inside and out!
A great one to make with the littlies 🙂
There’s no need to turn on your oven, there’s very little prep time and they are fun to make. What’s not to love?
PREP TIME 10 minutes
Servings 16 balls

Ingredients

  • 110 g butter, soft
  • 160 g icing sugar
  • 10 ml vanilla extract
  • 120 g heat-treated gluten-free flour (see link below)
  • 10 ml water
  • 70 g hundreds and thousands
  • 80(ish) g sprinkles / coloured sugar strands

Instructions

  • Weigh the butter, icing sugar and vanilla extract into a bowl and mix until smooth and fully combined. You can do this in a mixer or by hand.
  • Add in the heat-treated flour (read our article on how to heat-treat raw flour to make it safe to eat) and mix to combine. Now add in the water plus the hundreds and thousands and stir through.
  • Weigh the dough into 16 x 30g pieces and shape into balls with your hands.
  • Empty your sprinkles into a bowl and roll each cookie dough ball through the sprinkles until completely coated.
  • Place the balls on a plate / chopping board and pop in the fridge to chill – at least half an hour.
  • Get stuck in!

If you’re looking for a sweet treat that is ready in a matter of minutes and doesn’t require any lengthy mixing or oven time then look no further!

This recipe for gluten-free cookie dough balls only requires the oven to safely heat-treat the flour you will use as one of the ingredients. And if you’re not using your oven for anything else at the time, you can heat-treat your flour on the stovetop or in the microwave.

Other than that, you will spend more time resisting the urge to eat your cookie dough balls before they’re fully chilled than you will making them!

ALWAYS HEAT-TREAT YOUR FLOUR WHEN USING IN NO-BAKE RECIPES

If you don’t know what heat-treated flour is and why it is important to use it in any no-bake recipe, then read our guide on the what, why and how of heat-treating flour.

This recipe uses double the sprinkles. Why? Because, if you know me you will know that I am completely obsessed with sprinkles!

I use hundreds and thousands to mix through the raw cookie dough and coloured sugar strands to coat the cookie balls. If you only have one or the other, just use those on both the inside and out.

Please be careful when buying hundreds and thousands and sprinkles. Always check that they are gluten-free as many aren’t.

See my [May 2024] Facebook post on finding gluten-free sprinkles in Aldi. Some of my lovely customers added information on which other supermarkets you can get them in, too.

You will love these gluten-free cookie dough balls with sprinkles as they are good on sooooo many levels. They are quick and easy to make. They involve getting stuck in with your hands so are great for making with children. They use lots of sprinkles. And they taste absolutely delicious!
