Be careful not to over bake your sponge as this will make it more susceptible to cracking when you roll it.</span></div></li><li id="wprm-recipe-5692-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Roll up your sponge while it is still warm.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">FOR THE FILLING</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-5692-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">To make the buttercream filling, put the butter and almond extract in the bowl of a stand mixer with the balloon whisk attached and beat for a good few minutes until much paler in colour.</span></div></li><li id="wprm-recipe-5692-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add in the sifted icing sugar and beat to combine. </span></div></li><li id="wprm-recipe-5692-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Whisk in the water, if necessary, to loosen the buttercream so that it is a nice, spreadable consistency.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">TO ASSEMBLE</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-5692-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Once your rolled sponge is completely cool, carefully unroll it so that you can add the filling.</span></div></li><li id="wprm-recipe-5692-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Grate your frozen marzipan over the top of the sponge.</span></div></li><li id="wprm-recipe-5692-step-2-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Now spread an even layer of buttercream over the sponge using a palette knife if you have one. The secret here is to use sweeping motions across the sponge with your knife and *not* to lift the knife up off the sponge or you may well pull chunks of sponge with it! Don’t spread the buttercream to the ends of the sponge – leave a gap round the edges so that it doesn’t ooze out when you roll up the sponge!</span></div></li><li id="wprm-recipe-5692-step-2-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Time to complete your Swiss roll by rolling it back up again. Your sponge should have ‘retained a memory’ of the roll you put in earlier and so shouldn’t be too difficult to manoeuvre. Be firm with your rolling but try not to push down too hard or you’ll squeeze out the filling!</span></div></li><li id="wprm-recipe-5692-step-2-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Melt a small amount of white, milk and dark chocolate and liberally drizzle each over the top of your Swiss roll. </span></div></li><li id="wprm-recipe-5692-step-2-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Scatter some crushed mini eggs over the top.;Putting your finished Swiss roll in the fridge for five minutes to firm up slightly will make it easier to cut.</span></div></li><li id="wprm-recipe-5692-step-2-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Enjoy! xx Millie, Marcus and Me xx</span></div></li></ul></div></div>

<p class="has-text-align-left">I originally created this chocolate and marzipan Swiss roll for a feature in The Evening Standard on Easter baking &#8211; hence the marzipan and the mini eggs.</p>



<p class="has-text-align-left">If  you’re not a marzipan fan you can omit it from the filling and take out the almond extract from the recipe for a plain chocolate gluten-free Swiss roll.</p>



<p class="has-text-align-left">You could give it an orangey twist by adding orange extract and zest to the sponge and orange juice/extract to the buttercream and spreading a layer of orange marmalade over the sponge before rolling it up.</p>

<p class="has-text-align-left">This recipe for gluten-free cookie dough balls only requires the oven to safely heat-treat the flour you will use as one of the ingredients. And if you’re not using your oven for anything else at the time, you can heat-treat your flour on the stovetop or in the microwave.</p>



<p class="has-text-align-left">Other than that, you will spend more time resisting the urge to eat your cookie dough balls before they’re fully chilled than you will making them!</p>

<p class="has-text-align-left">This recipe uses double the sprinkles.  Why? Because, if you know me you will know that I am <em>completely </em>obsessed with sprinkles!</p>



<p class="has-text-align-left">I use hundreds and thousands to mix through the raw cookie dough and coloured sugar strands to coat the cookie balls.  If you only have one or the other, just use those on both the inside and out.  </p>



<p class="has-text-align-left">Please be careful when buying hundreds and thousands and sprinkles. Always check that they are gluten-free as many aren’t.</p>

They involve getting stuck in with your hands so are great for making with children. They use <em>lots</em> of sprinkles. And they taste absolutely delicious!</p>

The dough doesn&#039;t require any chilling and the biscuits bake in under 15 minutes. This will take around 3-5 minutes if you are using a stand mixer or electric hand mixer.</span></div></li><li id="wprm-recipe-3468-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add the egg and beat again until fully combined and your mixture is smooth and glossy.</span></div></li><li id="wprm-recipe-3468-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add in the flour and mix on low speed to start with and then turn your mixer up to medium high and beat the mixture until a dough forms.</span></div></li><li id="wprm-recipe-3468-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Split the dough into three batches. Roll the first batch of dough between two sheets of clingfilm to a thickness of around 5mm (use the <a href="https://www.thelittlebakeryofhappiness.co.uk/product/rolling-pin-spacers/">yellow rolling pin spacers</a> if you have them).</span></div></li><li id="wprm-recipe-3468-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Stamp out rounds of dough with a 7cm round pastry/biscuit cutter. Carefully transfer the biscuits to your lined baking trays.</span></div></li><li id="wprm-recipe-3468-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Repeat this process until you have used all your dough. You should get 36 rounds out of the dough.</span></div></li><li id="wprm-recipe-3468-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Bake your biscuits in the oven for 12 minutes until the edges are turning slightly golden (the rest of the biscuit will still be pale).  </span></div></li><li id="wprm-recipe-3468-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Remove from the oven and cool the biscuits on the trays for 10 minutes before transferring them to a wire rack to cool completely. They will still feel soft when you transfer them to the rack, but don&#39;t panic &#8211; they will firm up as they cool.</span></div></li><li id="wprm-recipe-3468-step-0-10" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Once your biscuits are cold, spread a thin layer of jam (I used strawberry) over the bottom of 18 biscuits. Top these with the remaining biscuits.</span></div></li><li id="wprm-recipe-3468-step-0-11" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Sift your icing sugar into a bowl and slowly add boiling water &#8211; no more than a teaspoon at a time. Stir the water into the icing until you have a thick glaze. If you are old enough to remember Marvin glue, this is the consistency you are aiming for. If this means nothing to you, go for a gloopy, wall-paper paste consistency.</span></div></li><li id="wprm-recipe-3468-step-0-12" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Spread a teaspoon of icing over the top of each biscuit, stopping around 1/2cm from the edge. <p class="has-text-align-left ghostkit-custom-Z105bsa has-medium-font-size">Empire biscuits also go by the name of imperial biscuits, German biscuits, Belgian biscuits, double shortbread biscuits and even more besides! Confusing, eh? So I&#8217;ll just stick to calling them empire biscuits.</p>



<p class="has-text-align-left ghostkit-custom-1bYEtE has-medium-font-size">An empire biscuit is basically two wonderfully short and buttery biscuit rounds sandwiched together with jam, topped with an icing sugar and water glaze and decorated (traditionally) with either glacé cherries or Jelly Tots.  But really you can decorate them with whatever tickles your fancy.</p>



<h2 class="wp-block-heading ghostkit-custom-Z1qrpiv has-medium-font-size" id="gluten-free-empire-biscuits-doable">GLUTEN-FREE EMPIRE BISCUITS &#8211; DOABLE?</h2>



<p class="has-text-align-left ghostkit-custom-1Xt0Il has-medium-font-size">You bet they are! In fact, I will be as bold to say that this kind of recipe plays to our advantage. Why so? Because kneading dough made with wheat flour activates the gluten network and overworking it can make for a tough biscuit. No gluten? No tough biscuit! Just light, crisp, melt-in-the-mouth and totally moreish gluten-free empire biscuits. Boom <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f60d.png" alt="😍" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<p class="has-text-align-left ghostkit-custom-Z17kp4o has-medium-font-size">My gluten-free empire biscuits recipe is nice and simple and can be made in just under an hour. The dough requires no chill time as the biscuits bake without spreading/losing their shape. It is best to make them in a stand mixer or using an electric hand mixer if you have one, as you want to get the butter and sugar mixture really light and fluffy, which will take around three to five minutes. You can make them by hand, but it will require a *lot* of elbow grease. If you do make them by hand, be sure to use very soft butter to give yourself a fighting chance!</p>



<p class="ghostkit-custom-Zmkarp has-medium-font-size">The recipe makes 36 biscuits in total &#8211; 18 empire biscuits, once sandwiched and decorated. If you don&#8217;t want to bake them all in one go, you can divide the dough in two and freeze half for another time.</p>

Get it right and you&#039;ll delight your friends and family and will be fighting them off for that extra slice!</span><div class="wprm-spacer"></div><span style="display: block;">My gluten-free Victoria sandwich cake recipe is the one I included with my <a href="https://www.thelittlebakeryofhappiness.co.uk/product/gluten-free-plain-flour-blend/">Magical Gluten-Free Plain Flour Blend</a> when I entered it into The Great Taste Awards back in 2017. </span><div class="wprm-spacer"></div><span style="display: block;">The judges used it to test the flour and said: &quot;The cake came out perfectly, with a golden top, and had a particularly delicious taste. <p class="has-text-align-left ghostkit-custom-Z14abIU has-medium-font-size">I would like to tell you that the Victoria sandwich cake was named in my honour. But that would be a hoofing great lie. And anyway, the cake has been around for a very long time and while I&#8217;m old, I&#8217;m not *that* old! </p>



<p class="has-text-align-left ghostkit-custom-Z1DqqHY has-medium-font-size">The Victoria sandwich cake (which you may also hear being called a Victoria sponge) is actually named after Queen Victoria. She was rather partial to a bit of tea and cake of an afternoon (a woman of exceptional taste, clearly). </p>



<p class="has-text-align-left ghostkit-custom-Zd2bqI has-medium-font-size">The Victoria sandwich cake is traditionally baked with fat, sugar, flour and eggs in two layers. These layers are then sandwiched together with jam and freshly whipped cream and finished with a light dusting of icing sugar. Simple, elegant, light and delicate, it is a truly delicious cake.</p>

<p class="has-text-align-left ghostkit-custom-1BUt2L has-medium-font-size">Kiss goodbye to your cakes getting stuck in their tins with this easy to make gluten-free DIY cake release. </p>



<p class="has-text-align-left ghostkit-custom-lAemA has-medium-font-size">Store your homemade cake release in a sterilised jar at room temperature for up to three months. Or keep it in the fridge for up to six months. If keeping it in the fridge, you will need to bring your cake release back to room temperature before using.</p>



<p class="has-text-align-left ghostkit-custom-Z1QLrph has-medium-font-size">To use, grab a clean pastry brush, dunk it in your jar of cake release and then coat the base and sides of your tin(s), making sure you get into all the nooks and crannies of any square/rectangular or quirky-shaped tins.</p>

I choose to make mine with shortening because it is top 14 allergen-free and so I can use the one mix across all my bakes rather than having to make a separate batch for any dairy-free / vegan baking I am doing.</li>

<h4 class="wp-block-heading" id="greasing-and-lining-a-cake-tin">GREASING AND LINING A CAKE TIN</h4>



<p class="has-text-align-left ghostkit-custom-cYIVd has-medium-font-size">In baking, recipes will sometimes instruct you to grease the tin before adding your cake batter. Other times, you will need to both grease <em>and</em> line the tin. If you are greasing <em>and</em> lining your tin, then the greasing part is simply there to help your baking parchment stick to the walls of the tin. </p>



<p class="has-text-align-left ghostkit-custom-Z24qCiy has-medium-font-size">You won&#8217;t always need to grease the base of the tin. You can decide whether to depending on the consistency of your cake. If I have a very loose, pourable cake batter, then I don&#8217;t bother to grease the base before adding my baking parchment.  If, however, my cake batter is thick and needs spreading/smoothing out, then I do grease the base before adding the parchment. This stops the parchment from pulling up as the cake batter is spread around the tin.</p>



<p class="has-text-align-left ghostkit-custom-ZWL0hS has-medium-font-size">Once you have greased and lined your tin, you do not then need to grease the parchment on the inside. But you absolutely do need to make sure you are using baking parchment and not greaseproof paper!</p>

<p class="has-text-align-left ghostkit-custom-2fQFfl has-medium-font-size">If you are only greasing (but not lining your tins) then you can simply brush your gluten-free DIY cake release all over the tin then pour your cake batter in. Don&#8217;t forget to get into all those nooks and crannies with your pastry brush!</p>
