Our speculoos biscuit mix is an easy-to-make, versatile mix that can be used to make a batch of wonderfully warmly spiced speculoos biscuits or a batch of speculoos crumbs to form the base of a gluten-free cheesecake.
We devised the recipe using a plant-based / dairy free baking block, which means that they’re also suitable for people following a vegan diet.
The biscuits hold their shape while baking, so you can also use fancy pants cutters and go to town with iced decorations on top if that’s your thing!🙃

Our gluten-free speculoos biscuit mix is an easy-to-make, versatile mix that you can use to Bake Yourself Happy at Home®. You can use the mix to make a batch of wonderfully warmly spiced speculoos biscuits. Or follow the instructions for baking speculoos crumbs for a cheesecake. Because why go to the trouble of making biscuits if you’re just going to crush them for a cheesecake base!
We devised our speculoos biscuit recipe using a plant-based / dairy free baking block. So our speculoos biscuits are not only gluten-free and suitable for coeliacs, but can also be enjoyed by those following a vegan diet.
You simply need to add baking block and cold water to our gluten-free speculoos biscuit mix. Then bring it together to form a soft dough, roll and cut, then bake your way to happiness!
The pack includes instructions for making both biscuits and biscuit crumbs.
Speculoos (or speculaas) biscuits are mostly eaten in Belgium and The Netherlands but we think they should be eaten at home, too! Lotus Bakeries began baking speculoos biscuits in the USA in the 1930s. These are the Biscoff products that you now see *everywhere.* But sadly they are not of gluten-free. So we did something about that 😉

GLUTEN-FREE BAKERY
The Little Bakery of Happiness is a small [but perfectly formed] specialist gluten-free craft bakery. We produce handmade sweet and savoury treats from our bakery at Elkington Lodge in Welford, Northamptonshire.
Everything we bake is gluten-free and we do offer some dairy-free and vegan goodies, but please note that while our bakery is a controlled gluten-free environment and we do have strict cross-contamination controls in place when baking food that is dairy free and/or vegan, we do use milk, eggs and meat products on a daily basis.

Our gluten-free speculoos biscuit mix contains NONE of the top 14 allergens.
It requires the addition of a plant-based/dairy free baking block and so is suitable for vegans.
