We have formulated our rough puff pastry recipe to make it as simple as possible to make deliciously melt-in-the-mouth flaky pastry at home.  It requires a little more patience to make than our gluten-free shortcrust pastry mix but it is 100% worth it! The first step is to make a base dough, which you then roll out, add butter and fold to create those lovely layers.  Chill, repeat then you’re ready to go.

Our gluten-free rough puff pastry mix requires the addition of butter and we do not recommend substituting this for a dairy-free / plant-based alternative. If you need a dairy free or vegan pastry, we have a vegan gluten-free savoury pastry mix (and a sweet version). These are more like a shortcrust pastry than a flaky/rough puff one.  Our gluten-free hot water crust pastry mix is also formulated to a dairy-free recipe (it is not vegan, though).

We always recommend rolling your pastry between two sheets of clingfilm so that the structure of the pastry is not altered by the addition of flour for dusting.

Following the on-pack instructions, this mix will yield a ball of pastry weighing approximately 750g.

Our gluten-free rough puff pastry mix contains NONE of the top 14 allergens.

It does, however, require the addition of butter (MILK).

The Little Bakery of Happiness is a small [but perfectly formed] specialist gluten-free craft bakery. We produce handmade sweet and savoury treats from our bakery at Elkington Lodge in Welford, Northamptonshire.

Everything we bake is gluten-free and we do offer some dairy-free and vegan goodies, but please note that while our bakery is a controlled gluten-free environment and we do have strict cross-contamination controls in place when baking food that is dairy free and/or vegan, we do use milk, eggs and meat products on a daily basis.



We use Royal Mail to send out happiness. You can choose between a Tracked24 and a Tracked48 service for most products.

Cakes by post are all sent out on a Tracked24 service and postage is charged on each box sent.

All other happiness is sent in one parcel with the all-up weight determining the cost of postage.
